This recipe isn't on the blog yet, but so many of you asked for a vanilla version after I posted the vegan chocolate cupcakes a few days ago that I wanted to include it as soon as possible. The recipe needs just 8 ingredients and makes 5-6 cupcakes. .

Vegan Vanilla Cupcakes
1/4 cup milk of choice
1 1/2 tsp white or apple cider vinegar
1/4 tsp pure vanilla extract
1/3 cup pure maple syrup or agave
3 1/2 tbsp oil – If you don’t mind fat-free texture, you can use applesauce
1 cup white, spelt, or bob’s gf flour
1/4 tsp salt
1 tsp baking powder
optional pinch cardamom or cinnamon

Whisk first five ingredients. Preheat oven to 350 F. Line a cupcake tin. Stir all dry ingredients to the wet just until evenly mixed. Portion into the liners, about 2/3 up because they will rise. Bake 10-12 minutes or until risen and a toothpick inserted into the center of a cupcake comes out clean. .

For those times when you need a simple and delicious brownie recipe that will not let you down. Every ingredient is something you can keep in the pantry, to always be prepared any time you need a last-minute dessert to feed a crowd or your family. Also, no cauliflower or beans… I do know how to bake without them, if I want to 😝

Vegan Chocolate Brownies
1 1/2 cup spelt, oat, or white flour
1 cup unsweetened cocoa powder

1/3 cup dutch cocoa powder

1/2 tsp salt

3/4 tsp baking powder

3/4 cup brown sugar or coconut sugar

2/3 cup unrefined or regular sugar

2 tbsp cornstarch or ground flax

1 cup mini chocolate chips, optional

handful chopped walnuts, optional

1 2/3 cup water

3/4 cup oil

1 1/2 tbsp pure vanilla extract .

Preheat oven to 350 F. Line a 9x13 pan with parchment. Combine dry ingredients in a large bowl and stir very (very) well. Whisk in wet, and smooth into the pan. Bake on the center rack, 22 minutes. They should look underdone when you take them out. Let cool, then fridge at least 8 hours (preferably overnight), during which time they firm up considerably without becoming dry and will also taste much sweeter with a deeper flavor. I think these brownies have the best flavor and texture two days after they’re made… if you can keep them around that long!

I don’t think I’ve ever talked about this on the blog before, but there was a time in my life when I felt invisible. It was in my sophomore year of high school, after I transferred to a school with almost 3,000 students and would go to class every day feeling like just a number; an unimportant face lost in the crowd. It definitely didn’t help that I was really shy back then. (People who knew me would probably be surprised to learn that, because I didn’t seem shy at all. I knew how to hide it.) If you’d have told me the future, I would have said you were dreaming. Certainly it’s way beyond anything I could have ever dreamed, and every single part of it is thanks to you. If you've ever made one of my recipes, or mentioned Chocolate Covered Katie to a friend or relative, or even if you just silently follow me here on instagram, thank you a million times over. *If using coconut butter, there’s no need to bake. Just combine all ingredients, smooth into a pan–with or without a crust–and chill until firm.
Preheat oven to 350F. Fill a pan 1/2 up with water. Place on oven’s lower rack. Line an 8-in pan with parchment. Beat all ingredients except chips in a blender or food processor, just until smooth. Stir in chips or save them for later if you prefer. (Optional crust: process 5 graham cracker sheets with about 2 tbsp oil, then spread in the lined pan. Or use your favorite crust.) Spread batter into pan, and place on center rack, above the water. Bake 25 min, then do not open the oven, but turn the heat off and let sit an additional 5 minutes. This helps the cheesecake cool gradually so it doesn’t crack. Take out still-undercooked bars. Let cool at room temp 1 hour. Then refrigerate overnight, during which time they firm up. .

Cut sweet potato into fry shape with a knife. Place in a large bowl and soak in water for 30 minutes to an hour. Drain, and be sure to pat completely dry. Preheat oven to 485 F. Line a baking pan with parchment paper. Toss or spray the sweet potatoes with oil, but don’t add the seasonings yet. Arrange in a single layer on the baking sheet, place on the center rack, and bake 20 minutes. Turn the fries, then bake another 5 minutes or until desired doneness. Toss with seasonings of choice.

Combine first 5 ingredients. Grease a donut OR mini muffin pan. Set oven to 350 F. Stir together all remaining ingredients except berries. Pour wet into dry once oven is preheated, and stir until just evenly mixed. Don’t overmix. Either stir berries in carefully so they don’t break and turn everything purple, or press them in after portioning the batter into the pan. Bake 10-12 min (depending on flour used), or until donuts have risen and are cooked through. Let sit 5 min before removing from the pan. Frost w/ basic glaze, or w/ straight-up coconut butter, which is my favorite! .

1/2 cup mini chocolate chips, optional
1 3/4 cup yogurt, such as coconutmilk yogurt
1/3 cup oil
2 tsp pure vanilla extract
1 cup chocolate chips
2 tsp oil

Preheat oven to 350 F. Line muffin tins with 14-16 liners. Combine the first 7 ingredients (and 1/2 cup chips, if desired) in a large bowl, and mix very well. In a separate bowl, combine all remaining ingredients except the 2 tsp oil and 1 cup chips. Pour wet into dry, stir until just evenly combined, and pour into the muffin tins. bake on the center rack 15-20 min or until cakes have risen and a toothpick inserted into the center of a cake comes out clean. Let cool. For the filling: very carefully melt the 1 cup chips, then stir in the 2 tsp oil for a thinner consistency. Use a spoon or knife to cut the center out of each lava cake, making sure to not go down too far. Set tops aside. Divide filling among cakes, then place tops back on. Top with ice cream, whipped cream, or frosting if desired to cover the seams.

Handful chocolate chips
Unless you like the taste of fat-free baking, add 1 tbsp oil, buttery spread, or nut butter (If oil, scale the milk back a little)
Optional: 1/4 tsp cinnamon .

Preheat oven to 380 F. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 20 min, or more until firm. Finally, set your oven to “high broil” for 3-5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.
