From my book IN HER KITCHEN / Bisrat Melake, 60 - Addis Ababa, Ethiopia / ENJERA WITH CHURRY AND VEGETABLES- Difficulty: medium - Time: 3 days (if you need to prepare the enjera), less than 2 hours if the enjera is already ready - Ingredients: 1 savoy (cabbage), 10 sweet green chillies and 25 string beans, red chilli powder, 4 onions, oil, salt, pepper, cauliflower leaves, a plate of Mitin Shuro (yellow dried peas powder), a plate of split peas, yeast, Teff flour (cereal from Ethiopia) / To prepare this dish you need to cook different ingredients separately. It is the product of various recipes. The Enjara, whose preparation takes 3 days, is the first thing to make: ENJARA: Mix 1 kilo of teff flour and 1 spoon of yeast with some water until you obtain a smooth and dense dough - let it ferment for 3 days - now the dough should be much softer than when you prepared it 3 days before. Add water until it becomes cream-like. Use it in the same way as when you make crepes. If you have the possibility to use an Ethiopian oven in ceramic (like the ones at her back in the photo), do use it! / CHURRY (in the centre of the photo): Stir fry 3 chopped onions and 10 chopped sweet chillies in some oil for a few minutes. Add 3 glasses of water and let it cook for about ten minutes. Then, add the split peas and the plate of Mitin Shuro. Mix well, cover with a lid and cook on a low heat for about 30 minutes / CAULIFLOWER LEAVES (the dark green vegetables on the sides of the photo): Boil some cauliflower leaves in water. Drain and chop them and fry them in a pan with some oil, onion and salt / LIQUID CHURRY (the small orange spots in the photo): Fry lightly half an onion and a pinch of hot chilli powder in some oil. Add 200 gr of Mitin Shuro and two glasses of water. Cook for 20 minutes / STRING BEANS AND SAVOY SALAD: Slice the savoy into stripes and chop the beans. Boil everything together in some water to suit your taste. Drain the vegetables and put them in a pan with oil and chilli to sauté them for about ten minutes / Now that all the ingredients are ready, you can place them in the dish as it is shown in the photo and serve it. #grandma #ethiopia

For each person, he designs a special treatment path and a unique musical approach. That’s one more reason why his house is full of a variety of musical instruments from all around the world. Naturally, they have also become his children's playthings. For the moment, Noah is exhibiting a distinct preference for the drums. ‘Toy Stories’ is the result of an 24 month round the world trip where I visited a variety of countries and cultures and took photographs of children and their toys. I would often take part in a child’s games prior to arranging the toys for the photograph.
Despite some differences, I found similarities between children living worlds apart. Even in different countries, some children’s toys played the same function, or example protecting them from dangers and things they feared in the night. - Toys haven’t changed all that much since I was a kid. He’s a tool sharpener. He started this job, his first job, 7 months ago. His work basically consists of sharpening scissors and knives. He starts work every day at 10 a.m. and continues until 9 p.m., with a break of two hours for lunch. He has Fridays off. He gets paid on a per-day basis: 50% of whatever the shop earned that day. I had already had occasion to learn that hospitality is a typical trait of the Fijian character, regardless of where they live or how they spend their days. Ratu, his siblings and even his grandmother were living proof of this. Ratu is 20 years old and recently went back to school. For years, he worked in a fresh produce market, breaking his back from dawn to dusk. However, as soon as he'd saved up enough, he enrolled in a design course. His dream is to turn the ideas of Fiji's entrepreneurs into magazine advertisements, using graphic design to help the businesses on the archipelago grow. Meanwhile, he shares a home with two of his five siblings on the outskirts of the capital of Viti Levu island. Their apartment is large, with a room for each of them and one for guests, with a pleasant garden encircling it. It is a brick building, simple and sparsely furnished, but its inhabitants’ care and kindness lend it warmth.Ratu, his brother, his sister and I did a lot of fun things together. We went snorkeling in one of the most beautiful seas I have ever seen (in fact, this photo was taken at the end of that day) and we went to see their grandmother, an excellent cook whom I photographed while she was grappling with a giant fish and some coconuts. After dinner one evening I even tried to dispel a myth that hovers around Ratu: he's a real celebrity in the pool hall not far from his house, because apparently it's been two years since anyone has beaten him. I tried but, unsurprisingly, was unable to alter local legend. She sets up her open-air theater on the roof: a few chairs, wicker loveseats, a couple of hammocks and a white sheet to serve as the projection screen. This anecdote may be all that's needed to convey her desire to create a real rapport with this place and its people. Sabali is Italian, born in Livorno, Tuscany to an Italian mother and a Beninese father. "In Italy, I was always the black girl. In Africa, I was white. Here in Haiti, I'm just a 'sister'," she told me. It was work that brought her here. She's an agronomist, specialized in tropical crops, and is heading up a program to relaunch Haiti's coffee industry. The country used to be famous the world over for growing and selling coffee, but production has fallen off in the last thirty years. She took me to see where she spends her days, amidst the groves of coffee trees clinging to the mountain slopes, a crop to which she devotes endless time and patience. She and her partner have explored the most remote corners of Haiti together. They took me on long motorcycle rides through wild landscapes and along muddy, broken roads. More than once I closed my eyes, fervently hoping nothing would happen to us along the way. They enjoy cooking and usually have guests at home, like me. When Sabali rented the house, it was explained to her that there were also guards who would ensure her home was secure day and night. It seems that, in Haiti, this is more of a necessity than a nicety. It was news to me and I found it a little shocking. My hosts explained that, in order to adapt to a local culture, foreigners sometimes have to behave how the locals expect them to, and that includes having guards. Later, however, I noticed that their guards were unarmed and that their biggest task, it seemed, was to maintain backyard security, watching over chickens, goats, sheep, a horse and a cow. Difficulty: medium - Time: about 1 hour- Ingredients for 4 people: - one barracuda of 1,5kg ( or another kind of fish), 4 green mangoes, 4 tomatoes, 2 aubergines, 1 red chilli, ginger and two bunches of spinach. Seed oil, salt, pepper, curry and masala. A dish of rice /// The barracuda is one of the most popular catches in Zanzibar, but it is not fundamental for this recipe, you might want to use any other kind of fish. Let’s see how to prepare it:

First of all, scale the fish and cut it in chunks of about 10 cm length. With a knife, make some cuts on the side of the fish and salt them inside. Chop a piece of ginger and put it inside and outside the fish.

Heat two spoons of oil in a pan and fry the fish for 10 minutes on each side. Drain it from the oil.

If you have the rice cooking machine, you can use it, otherwise boil the rice in some water.

Wash two bunches of spinach and cut them in stripes. Boil everything in some water for ten minutes and drain. Wash the tomatoes, aubergines and green mangoes and dice them. Heat two spoons of oil in a pan and when it is hot enough add, first, the tomatoes and, 5 minutes later, the aubergines. At this point, add a teaspoon of curry, one of masala and two pinches of salt. Let it cook for 5 more minutes and then add the mangoes. Wait for 5 more minutes and add the boiled spinach. Stir the mixture and pour a glass of water. When the water starts to boil, let it cook for other 10 minutes.

Now, the dish is ready to be served on a large plate, keeping fish, rice and vegetable sauce separate. Enjoy your meal! #zanzibar #food #recipes #grandma #cooking

That one year was all she needed to realize that she didn't want to be a biologist, because she wanted to work with the animals instead, a job she knew she’d love. That was why she decided to move to Puerto Viejo, where there is a sort of animal hospital, where she applied for a job. After 6 months as a volunteer, she was given a contract. In those 6 months she specialized in “parrot and monkey rescue.” “I love to work here. It is a magical place. Every day many people come here and bring us injured animals that they’ve found on the street. We rescue them, and when they are ready, we set them free in the forest.” She works 5 days a week for about 8 hours a day. She makes USD 150 per week, but she gets a lot of tips from tourists who go there to visit. Dress them up '70s style, with square tortoiseshell glasses, bell-bottom trousers, flowered shirts, hot pants. Now add long hair and moves reminiscent of Austin Powers, and you've got the best of the surreal music group S.O.D. (Simple of Detail). They’re Mary Jane and Tom Hom, the only rock-solid couple who aren't a couple at all. They live and work together. He's a photographer and she's the stylist in charge of his sets. A while ago, they also joined forces to create S.O.D., which has grown into a real phenomenon on the national music scene. The first time I saw them was at one of their shows, a blend of concert and cabaret performed for an audience of hundreds of adoring fans, not to mention the cameras of a national TV crew. I found them more or less by chance. I had stumbled across Tom’s picture on the couchsurfing site and hadn't been able to resist finding out who he was. He and Mary belong to that category of couchsurfers who can't actually host visitors (usually because their homes aren't big enough or because they live with people who don't relish the idea of strangers coming and going), instead offering travelers their time. And what a time we had! I saw two fantastic concerts, where I felt like I'd either traveled a few decades back in time or ended up on a movie set. One was in a very large venue in front of a shopping mall, while the other was in a small club reserved for diehard fans. Tom and Mary's role in S.O.D. is mostly to sing, but their choreography is coordinated and it's exhilarating to watch them dance. Other 3 people make up the other members of the group. Dinner with the whole band after the show was a series of absurd conversations. Neither Tom nor Mary speak much English and so the others attempted to translate for us, the level of hilarity rising with every round of beer. Tom and Mary are a perfect example of the numerous possibilities that couchsurfing offers. Esteban is a citizen of the world. He was born in Uruguay, but then lived in Spain until he was 14. He went back to Uruguay, but since, over the years, he has lived in different parts of the world working as a journalist. His first son, Niko, was born in Rome and spent his early years in Cuba, where his brother Olivier was born. For 3 years now, the whole family, Mom included, have been living in Rio de Janeiro, in Brazil.
Esteban no longer works as a journalist. Now he works as a PR rep in the communications sector for Facebook South America. He spends most of the week in Sao Paulo, the largest city in Brazil, 6 hours from Rio by car. On weekends he’s at home, and he loves to spend time with his children.

She has a great three-story villa on the lake with spacious rooms decorated with art, musical instruments, and beautiful objects. Giovanna and her husband, Ueli, welcomed me as if they had known me forever, and I immediately felt at home. They have been married for more than forty years and have done so many beautiful things together. “We traveled the world, we obtained a skipper’s license and bought a boat, started singing in a choir; in a word, we have never been bored ever since we got together,” they say, smiling. Then, it took Giovanna a while to decide what to cook. She wanted her recipe to be as representative as possible of her country. Gabriele Galimberti has tried to see things differently. He has learned that these men and women actually had a job where they come from and dream of being able to work in Europe. So when he set out to photograph a group of migrants eager to reach Switzerland but blocked in the city of Como, in northern Italy,he decided to show them as they would have liked to be shown. Dembo as a baker, Osman as a bus driver, Noreen as a nurse and Jafar as policeman. These are just some of works they are used to do and skilled in. But Dembo, Osman, Noreen, Jafar and many others are now living in lurid tents, camping out in a small park adjacent to the city’s station in squalid conditions. These photos are their CV’s translated in images. Galimberti has borrowed the language of publicity to show what reportage cannot. These photographs are not real. But they should be. In order to illustrate the enormous chasm between their present and a possible future Galimberti has also done a series of still lifes of where the migrants actually sleep. For the last 15 years his home bases have been first Paris and then Haiti. It was on that Caribbean island that he and his partner Sabali conceived their first son, Enea. About 3 years ago, Paolo and his family came back to live in Italy, in the city that Dante called home, and that is where their daughter Sara was born.
Every day, Enea and Sara go to a special preschool, called “the preschool in the forest.” It is a place high up in the hills surrounding Florence, a preschool where children play in the woods, walk around in the fresh air and learn to recognize plants and animals. Paolo takes them there every morning on his bicycle, 15 km uphill on the way and 15 km coming back (downhill this time, luckily). “It’s one of the best moments of the day. We listen to music and sing as we slowly get further away from the city. Rain forests and granitic cliffs are a testing ground, where distinctions of gender, race or religion cease to exist. The differences between high and low are made level. Kids from the favelas that cling to the hillsides come down into the city, losing themselves among the upper-crust bourgeoisie well-heeled from Ipanema and Leblon. A surfboard, a soccer ball or a skateboard is all it takes to make them indistinguishable. Social background doesn't matter for the players of the Flamengo basketball team portrayed in one of these pictures; difference sit sinks while when the girls from the Brazil national synchronized swimming team, Brazil national champions, float over the twirl in the water. Sports blend favela boys in love with football, bikers rolling down the seaside and surfers resting on the beach, as those shown in these images. Call it the miracle of motion - motion that changes perspectives and revolutionizes viewpoints, as in these photos, which provide a portrait of a city and its inhabitants as they have never been seen before. In Brazil, the democratic nature of sports is, after all, guaranteed under the Constitution. Article 217 of the Brazilian Federal Constitution, adopted in 1988, four years after the horrors of dictatorship had come to an end, describes sports as a social right, for which the State is, at least in part, responsible. Whether as a consequence of its constitutional obligation or of an inclination to comply with its people's wishes, the most recent census of the State of Rio, conducted in 2003, counted 155 stadiums, 1685 small playing fields, 367 swimming pools, and 39 athletics tracks. Then, make ver- tical slits (but don’t cut all the way through) in the peeled portions of the eggplant, in order to create openings for the stuf ng. Sprinkle some salt inside and outside and let the egg- plants sit for 15 to 20 minutes. - 2 Wash the parsley in a bowl with water and the vinegar, then drain and chop it and set aside.- 3 Pat the eggplants dry. Heat the sun ower oil in a large skillet. Add the eggplants and cook them on all sides until they are golden and soft- ened, 10 to 12 minutes. Drain them on paper towels while you prepare the lling. - 4 Heat the olive oil in a medium pan. Add the onion and chilies and sauté until golden. Then add the ground beef and season with salt and pepper. When the meat is no longer red, add half of the diced tomatoes. Cook over medium-low heat, covered, for 5 minutes. Uncover and continue cook- ing until all of the liquid is absorbed, 10 to 12 minutes. Remove from the heat, stir in the parsley, and set aside. - 5 Preheat the oven to 350°F. - 6 Using a spoon, create some space inside the opening of the eggplants for the lling. Stuff each with the mixture of vegetables and beef, pat- ting rmly. Put the eggplants in a baking dish and top each with the sliced tomatoes and, if you like, a sweet green chili. Season with salt and pepper. - 7 Pour 3⁄4 to 1 cup of boiling water over the eggplants and top with the remaining diced tomatoes. Loosely cover with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for 15 minutes, or until the lling is browned. - 8 Serve the stuffed eggplants with the tomatoes and juice from the pan. #grandmas #cook #recipe

The family tree fills almost an entire wall of the large living room. Yellowed photos, clippings and handwritten names cover almost every inch. Names have been added by different hands over the years as the family has expanded. It was Eleina who started the chart, a gift to her grandparents when she was still in school. Now it is the elderly couple who patiently continue her work, noting each new birth and grumbling good-naturedly about their granddaughter's failure to finish what she started. It has been a while since 22-year-old Eleina last lived in this big house in Kekava where, occasionally, she still hosts couchsurfers. She was 17 when packed up and left the little Latvian village of her ancestors to study photography in London. Now she divides her time between the two countries, accompanied by one constant companion, the teddy bear she has had since childhood. "It has to be in the same place I am," she says, "otherwise I don't feel at home." The other thing that makes her feel at home in Latvia is walking through the spacious rooms of her grandparents’ house, where every object is a reminder of the past. She also loves their greenhouses. "I feel more at ease here than anywhere else," she explains. "I love to help my grandparents with their tomatoes and vegetables. It makes me feel close to nature." Nature is all around us here, and not only in the lush greenhouses behind her family home. Kekava, though only 15 minutes from Riga, is known as the "chicken village," for its hundreds of chicken farms. One evening, Eleina's grandparents roasted a delicious one in my honor. They were exceptionally hospitable, giving me my own room with a private bath on a separate floor from their rooms. Eleina and I had long talks about life and photography, the career we have in common. "I'm proud of my country's dramatic history," she told me during one of our leisurely sightseeing strolls. The Maasai of Tanzania and Kenya have a series of rites of passage that accompany boys into adulthood. Every 10 or 15 years a new warrior class will be initiated into the tribe. Boys between the ages of 10 and 20 are brought together from all across the country. Dozens of houses are built that will serve as the place of initiation. The night before the ceremony, the boys sleep outside in the forest. At dawn, they return to the little makeshift homestead for a day of singing and dancing. They drink a mixture of milk, cow’s blood, and alcohol and eat piles and piles of meat. After the festivities, boys who are of age (12-16) are ready to be circumcised. The Emuratare is the most important ceremony in the life of a Maasai boy. Once circumcised, the tribe will consider him a man, warrior, and protector of his village. As the young man makes his way to where the elders will circumcise him, friends and family members will taunt the boy by saying things like “If you flinch, we will disown you.” The Maasai value bravery of their warriors and the circumcision is a boy’s first way to prove his courage in the face of severe pain. It takes about 3 months for the circumcision to heal and during that time the young men wear black clothing and live in huts built by the women of the village. Riverboom is a company founded by war reporters upon a moonless night in the North-West of Afghanistan, in an infamous valley infested by wolfs, bandits and runaway Taliban. This is the valley where the river Boom flows. Ever since Riverboom has been operating for world peace from its headquarters in Vevey, Switzerland, on the shores of the placid lake Leman. The Riverbooms are photographers, filmmakers, graphic artists, journalists and writers. Riverboom is an idea factory, a producer and a publisher. For discerning clients we create visual campaigns and build an outside-the-box communication. Riverboom publishes a series of illustrated books in the collection “Baechtold’s Best”. These are guidebooks entirely made of images for uncommon destinations like the North Pole, Afghanistan or Louvreland. The collection “Versus the World” opposes countries like Switzerland or cities like Florence to the rest of the world in a visual contest. The 2009 Ngorogoro Wildlife Conservation Act placed new restrictions on human settlement and subsidence farming in the Crater, displacing Maasai pastoralists, most of whom had been relocated to Ngorongoro from their ancestral lands to the north when the British colonial government established Serengeti National Park in 1959. The construction of luxury tourist hotels in the Conservation Area allows people to access "the unparalleled beauty of one of the world's most unchanged wildlife sanctuaries", according to a government brochure, even as thousands of Maasai have suffered forcible eviction and have been denied access to water sources for their livestock.
