In this collaboration Chef Namai san served a fish course of Kue (Longtooth grouper) with squid liver, sorrel, mint, coriander, parsley and shichimi chilli pepper. Zuucchini was served in little spheres and puree and mild squid liver was the sauce.

As mentioned before Namai is very skilled in incorporating well controlled bitterness or green flavor into his dishes, striking a harmony with sea umami and butter. This dish was one example.
_
In the past I had dishes at Ode with the same phenomenon. Oyster and snap peas risotto (pic 2-3) with a clam chowder sauce was sharpened with cilantro while lentil ice cream neutralized the savory note. An Ozaki beef tartare with celery and negi and raw sardine with rosemary were covered with black meringues made with sardine bones and heads.

My favorite dish at Ode to-date was the 地蛤 菜の花 clam with nanohana (rapeseed flowers) (pic 6). The dish comprised of nanohana gnocchi with sea beans, and giant clam, a nanohana butter sauce, hotaruika (firefly squid) sauce. The ingredient list was simple but the harmony of umami, bitterness, oceanic savory and dairy and seafood sweetness was so seamless combined, delicious till the last drop

My two favorites of the night were a clam pizza (pictured, after baking and before baking) and a lamb sausage and pulled pork pizza.

For the clam 'za, I made a base sauce using clam juice, hotate soy sauce (just happened to have that in the fridge), mascarpone, and chopped garlic. A little mozzarella and parmesan with Japanese clams. Super yummy!

For the lamb and pulled pork one, I made a base sauce out of roasted Japanese pumpkin, mixed with a homemade persimmon miso, and the braising liquid from Japanese charsu. The sausages were wonderful, spicy Moroccan Merguez sausages with Harissa from @sidecar_sausages, along with Sidecar's pulled pork. Cheeses were mozzarella, aged comte, and mimolette.

I totally admit I've been making pizza a little too often these days. But, thanks to @jimmarzo, I've been particularly obsessed with perfecting my pies.

“Mugi to olive” is one of trendy ramen restaurants in Tokyo now recommended by Michelin so customers there were quite international 😊 their ramen is basically chicken, dried-sardine and “hamaguri” clam based, which is unusual. Even “nagaimo” on it. I believe I’ve had a thousand bowls of ramen in my life but this tasted a bit different. It’s a must try✌🏻

From shrimp fudge filled heads, shrimp skin with lacto mirabelle plum and samphire powder, dried fruits marinated in shrimp and koji reduction, broth with green gooseberry juice, ice filtered mussel juice and black currant wood/bud oil. They all comprised of acid, fermented umami, natural flavor from the sea. The raw shrimps like amaebi with the signature nordic berry tartiness in the broth and the shrimp and seafood flavor in the broth. I really like this whole combination which was complex in making but very easy to comprehend as they all harmonized in the end.

The most interesting found was the continuous use of broth or flavor from the previous dish in this meal. The last mussel dish utilized venus clam juice from the dish before. This shrimp dish used the mussel juice from the last dish. A linkage to tie the dishes was based on actual ingredient and flavor, not just imagery. Next dish, shrimp broth or reduction?!
