Time flies. Three weeks ago I was in Greece and made this VEGAN CHOCOLATE CAKE w COCONUT FLAKES AND WALNUTS. I’ve always found vegan baking quite difficult. Ive failed lots of times trying to bake without eggs, milk, butter, and also without wheat flour, but then this vegan and gluten free ... Time flies. Three weeks ago I was in Greece and made this VEGAN CHOCOLATE CAKE w COCONUT FLAKES AND WALNUTS.🍫 I’ve always found vegan baking quite difficult. Ive failed lots of times trying to bake without eggs, milk, butter, and also without wheat flour, but then this vegan and gluten free chocolate cake happened and it was made perfectly. I recommend you to try it. It’s delicious!😍

When I shared these on my stories yesterday I had a few people message me and ask me if they were healthy. I thought to myself, well yes kind of, except the choc chips.. but what does healthy really mean? Low calorie? Low fat? High fat? Low sugar? No gluten? Vegan? A perfect balance of macros? .
.
Healthy is balance of good nutrients, and while these do contain conventional choc chips, approx 1 TBS per muffin, they are refined sugar free only sweetened with natural honey, I used spelt flour which is kinder on our gut and contains nutrients, vitamins, minerals, and essential organic compounds that other forms of wheat don’t contain. I love using spelt flour as a replacement for conventional flours, however you will notice a difference in texture. .

INGREDIENTS
.
1¾ spelt flour or traditional flour
1 teaspoon baking powder
½ teaspoon baking soda
⅓ cup melted coconut oil or extra-virgin olive oil
½ cup honey or maple syrup
2 eggs, preferably at room temperature
1 cup plain Greek yogurt, I used @yoproau
2 teaspoons vanilla extract
1 1/2 cups frozen raspberries
3/4 cup white choc chips.
METHOD
.
Preheat the oven to 170c
grease a 12 cup muffin tin or line with muffin moulds.
In a large mixing bowl, combine the flour, baking powder, baking soda. Mix well with a whisk.
In a medium mixing bowl, combine the oil and honey or maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt and vanilla. Mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 15 seconds.
Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). Gently fold the raspberries and choc chips into the batter. The mixture will be thick, but don’t worry.
Divide the batter evenly between the 12 muffin cups. Bake the muffins for 22 to 24 minutes, or until the muffins are golden and when inserted with a skewer come out clean. Place the muffins on a wire rack to cool.

Overeating is what will make you gain weight, specifically processed, high fat foods. Too many times I see people avoid things like bread or fruit thinking it will make them gain weight. It won't.

It isn't one specific thing, it is the cumulative effect of many factors and processes which dictate body composition.

3 slices red apple
5 oz. seedless organic grapes
2 Tbsp raw walnuts
2 Tbsp dried apricots

Instructions:
Dip apple slices in pure pineapple juice, or lemon water, to prevent browning.
Place the cheeses, crackers, apples, grapes, walnuts and dried apricots into a meal prep container. (makes 1 box/per listed serving)
Keep it in the fridge for about 3-4 days.

I have never had any kind of food sensitivity test before so I found this really interesting, and it was great to find that I have no major sensitivities! You can see my results showed very low antibody levels for a few things including wheat, gluten, beets, and cane sugar. I am planning on reducing the amount of these foods in my diet and I'm excited to see if I notice a difference to how I feel! 💥 M A C R O S: Approximately 53g Carbs, 3.7g Fat, and 32g Protein (say what⁉️)
📍I N G R E D I E N T S: • 1/3 cup oat flour or buckwheat flour (40g)
• 1/4 cup vital wheat gluten (30g)
• 1 tablespoon cacao or cocoa powder
• 2 teaspoons stevia or sweetener of choice
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/8 teaspoon salt
• 1/2 cup unsweetened applesauce (4 oz)
• 1/3 cup water (2.6 oz)
• 1 teaspoon apple cider vinegar
📝 I N S T R U C T I O N S:
1️⃣ In a microwave-safe bowl, add out flour, vital wheat gluten, cacao, stevia, baking powder, baking soda, and salt.  Mix until well combined.
2️⃣ Add the applesauce, water, and apple cider vinegar to the dry ingredients.  Mix until well combined, or until achieving a cake batter consistency.
3️⃣ Microwave for 2 1/2 minutes, in one-minute intervals.  Check every minute until the batter has firmed up just like a cake.

Share your thoughts and comments below: A friend once said to me, “You can have more of this cake. It’s vegan so it’s healthy.” I have nothing against having a slice cake (vegan or not). The vegan-ness of a cake does not inherently make it #healthy. Here are three food buzzwords that catch my attention in the supermarket. All these words and phrases have very real meanings; however, none of these words mean “healthy”. You can read my complete list of 5 in my blog post at the link in my profile.

1. Multigrain: The term “multigrain” simply means that more than one type of grain was used to create the product; it does not mean a significant quantity of whole grains were used to create the product.  Look for products that list whole grains at the TOP of the ingredients list.

2. Low Fat and Fat Free: Fats facilitate proper brain development, blood clotting and absorption of fat soluble vitamins.  When food manufacturers remove the fats from certain foods they sometimes have to add something else for the product to remain appetizing. For example, manufacturers add sugar to low fat and fat free yogurts in order to make then taste good.  Read the nutrition facts label and ingredients list before purchasing low fat or fat free foods.

3. Gluten Free: There are people who are genetically predisposed to celiac disease–an autoimmune disease that causes damage to the small intestine when gluten is consumed.  For these people, gluten free foods are a must. But over the years “gluten free” has become synonymous with “healthy”, “low calorie” etc. Yes, if you switch to a gluten free diet you may experience some weight loss.  However, that weight loss may most likely be a result of the elimination of problematic ingredients (like refined carbohydrates) from your diet.  If you do not suffer from celiac disease or a wheat allergy, there is no health benefit to you purchasing the more expensive #glutenfree products. For the most part, we can avoid falling into most of these traps by reading the nutrition facts labels and ingredients lists on our foods.  What do you think? What are some other food marketing traps you’ve noticed?

Ingredients
1 3/4 cups white whole wheat flour or plain all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 eggs
1/2 cup melted coconut oil or olive oil
1/2 cup honey or maple syrup
1/4 cup milk or Greek yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas about 2-3 medium bananas
1/2 cup dark chocolate chunks or nuts optional

Instructions
Pre-heat oven to 350F. Grease or line a 12 cup muffin pan with muffin liners and set aside.
In a medium bowl, whisk the flour, baking soda, and salt. Set aside.
In a large bowl, beat eggs, oil, honey, milk and vanilla for 1-2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add-ins of choice.
Pour batter into muffin pan. Bake for 20-22 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes and enjoy!

To make gluten-free: Use Bob's Red Mill gluten free flour.
For dairy-free/vegan: use almond milk and flax eggs and maple syrup.
*Trader Joe's has white whole wheat flour that is also great in this bread.

I ate wheat bread, mock-meats, cereals, pasta, vegemite, regular peanut butter, regular tomato sauce, which all contain some type of gluten. I also switched my Celtic seas salt (which contains 83 minerals) to table salt (2 concentrated minerals) and regular tap water instead of filtered. This was the result after 4 DAYS! I was in physical pain from my body aching all over, the bloating and because my clothes were so tight from the added water retention and inflammation of my ceIls, I slept terribly (woke up what felt like all night long during this test, gluten is a potential neurotoxin), I ended up with perioral dermatitis around my chin and nose area (which il share in the next post) and my mind was very depressed. Feeling this way reminded me of how I used to feel before I transitioned to a healthy lifestyle, that constant ache. I felt server lack of motivation. I also craved more and more of these foods the more I ate them, even when I was eating a current meal I was thinking about what was next! and I didn't want or feel like fresh produce like salads and fruit- AT ALL. Which was really disturbing. For me, gluten/ overly processed food takes over my mind and body. This is why I choose to eat the way I do now. It is not worth it for me to go back to that way of eating and now you can see why. x

I'm grateful that I am for the 3rd or 10th time I am finally realizing just how much eating grains everyday is really not good for you.
I was gluten-free for 5 years straight. Since then, I have gone a couple months on and off excluding wheat from my diet. I have also gone weeks of not eating any sugar (fruit doesn't count because it's fructose not fractos). I've also gone raw vegan for a few weeks two months at a time.
The healthiest I have ever been is when I have had a 70 to 80% Raw diet and the other 20 or 30% sugar preservatives free diet and being gluten free. It's difficult to jump even as a vegan to something that clean in r current unhealthy American environment. So I have decided I am going to cut each unhealthy thing out one at a time while being aware and eating as healthy as I can. So I've started to cut out gluten again. Next month I will cut out sugar. And then the month after that I will go Raw again. This way I have a better chance of succeeding at the diet and lifestyle that I know is healthiest for me.

You won’t even know they are there! We put ours on a sprouted wheat bun and topped with avocado, ketchup, mustard kraut (that’s right—not mustard and kraut but mustard kraut—it’s bomb), homegrown heirloom tomato, greens, and @grillospickles #worldsbestpickle (not exaggerating). Lentil-Beet Burgers
.
1 3/4 cup cooked lentils
1 cup cooked brown rice
1 cup walnuts, toasted
1 small beet, peeled and shredded
1/2 cup gluten free all-purpose flour
1 medium onion, diced
2 cloves garlic, minced
1 flax egg, 1 tbs ground flax + 3 tbs water
1 tsp herbs de Provence
1 tsp salt
Ground pepper to taste

Sauté onion until translucent in a skillet adding water as needed to prevent sticking. Add garlic and sauté a minute or two more. Add all ingredients to a food processor and pulse until mixture comes together. Form six even patties. To bake, place on a baking sheet lined with parchment or a silicone mat for about 15-20 minutes or until crisp on the edges. Alternatively you can grill the patties. Enjoy in your fav bun with lots of fun toppings!

Note: you can freeze any uncooked patties for a later use. Just defrost prior to cooking or cook longer straight from the freezer.
