{ NEW} Chocolate Zucchini Cake + Coconut Whipped Cream with Berries We were SOO happy with the rave-reviews of the chocolate cake recipe that I posted a month or so ago, and thought it would be fun to do a SUMMERY version with fruit! Instead of making chocolate frosting, we made coconut ... { NEW} Chocolate Zucchini Cake + Coconut Whipped Cream with Berries 🍫🌻🌸🍓🎂 We were SOO happy with the rave-reviews of the chocolate cake recipe that I posted a month or so ago, and thought it would be fun to do a SUMMERY version with fruit!

Instead of making chocolate frosting, we made coconut whipped cream and spread half of it between the two chocolate cake layers and then the other half on the top with strawberries, blueberries, and raspberries. We used edible flowers for decoration, it turned out gorgeous and was so delicious!

Use 6 inch pans for a smaller cake, which is a perfect size.
P.s. Don't leave out the zucchini...it makes the cake so moist!

Chocolate Zucchini Cake
1 cup whole wheat flour
1/3 cup raw unsweetened cocoa powder
1 tsp baking soda
1/2 tsp sea salt
1 cup fresh zucchini, shredded
1/2 cup unsweetened almond milk
3 Tbsps raw honey
3 Tbsps pure maple syrup
1 Tbsp coconut oil. melted
1 large egg
1 tsp pure vanilla extract

Instructions:
1. Preheat oven to 350 degrees f. Spray two 6 inch cake pans with coconut spray.
2. In a large mixing bowl combine flour, cocoa powder, baking soda, and salt. salt Whisk dry ingredients together well.
3. In another bowl, combine shredded zucchini, almond milk, honey, maple syrup, coconut oil, egg, and vanilla extract. Whisk until well combined.
4. Add wet ingredients to dry ingredients and stir until combined, don't over mix.
5. Divide batter between the two 6 inch pans. Bake in preheated oven for 20 minutes or until a toothpick comes out clean.
6. Cool in pan for 10-15 minutes, carefully remove from pans and cool cakes completely on wire rack.

Coconut Whipped Cream
Ingredients:
1 can of coconut cream, refrigerate for an hour
1 tsp stevia or pure maple syrup (optional) *Place mixing bowl in the freezer to chill for an hour

Instructions:
Scoop out the top cream from refrigerated can of coconut cream, place in a mixer. Save the remaining coconut liquid and use in a smoothie later on if you wish.
Remove ice-cold mixing bowl from freezer.
Beat coconut cream on medium high speed for about 2 minutes. (Continued below in comments)

WHAT YOU NEED:
🍒 2 cups fresh cherries (I did 1 and 1/2 cups dark red and 1 cup Rainer), 2 cups plain Greek yogurt, 1 tbsp raw honey, a splash of vanilla extract and a splash of milk.

HOW YOU MAKE THEM:
🍒 Combine yogurt, honey, vanilla and milk. Stir to combine. Set aside.
🍒 Next, place cherries in a high-powered blender (@vitamix or @blendtec will work), and pulse/ blend. You may need to add a little water. Set aside.
🍒 Fill popsicle molds by alternating the yogurt mixture and cherry purée.
🍒 Once molds are 3/4 of the way full, use a thin skewer (or equivalent) to slightly swirl layers in mold, as desired. Then, finish layers.
🍒 Freeze overnight or at least 6 hours.
🍒 Remove pops from molds and enjoy!

1cup rolled oats
1/4 cup homemade almond milk
1 banana
1 tbsp baking powder
1 tbsp apple cider vinegar
1 tbsp maple syrup or local honey, sub your own sweetener
1 tsp vanilla
2-3 drops doTERRA Wild Orange essential oil.* 1/2 cup blueberries fresh or frozen
Place everything except blueberries in blender or food processor! Blend on high until batter thickens.
Stir in fruit.
Cook as regular pancakes, in lightly greased pan, add 1/4 cup of batter to pan, cook 1-2 minutes or until edges brown! Flip & continue to cook a few more minutes. Do this with rest of batter.
I created a blueberry and walnut sauce by heating 1/4 cup of berries with a bit of water and sweetener until warmed. A touch of vanilla & tapioca starch to thicken. ⅛ teaspoon sea salt
1 cup fresh blackberries or fruit of choice
Instructions:
Place the groats in a glass jar and cover with water to soak overnight.
The next day, drain the water and place all of the ingredients in a blender and blend until smooth, adding more milk if needed to reach desired consistency.
Serve with fresh blackberries or fruit of choice. Enjoy!

One of the exciting new additions to my health regimen is getting a daily dose of mint🌿! I was so happy to see it at the Farmer’s Market last weekend at the upstairs organic section – I picked a lush bundle for Nu ༣༠!
Mint, scientifically known as Mentha and ཨུ་ཤི་ལ། (Ushila) in Bhutan, is well-known for being an excellent mouth and breath freshener but it also provides a host of benefits which include aiding digestion, relief from IBS, indigestion and heartburn, relief from nausea, fatigue, and headache, as well as treating skin care problems and asthma 💚🔋🦖 Here is how I like to incorporate this magical herb in my diet:

1. Add it to yogurt with fruit 🥛: Mix plain unsweetened yogurt with some fruit – grapes, strawberries, mango and papaya pair especially well with mint. Sprinkle chopped fresh mint and enjoy!

2. Make your own mint tea to aid digestion 🍵: Place 5-10 mint leaves in a mug, use more if you enjoy a strong mint flavor. Pour very hot water (not boiling!) over the leaves and let it steep 5-10 minutes. You can remove the leaves or leave them in. I leave them in and add a slice of lemon and a teaspoon of honey! 🍋

3. Add it in your green smoothie 🥒: Add 3-4 fresh mint leaves to your usual green smoothie for a fresh zing! Try this one out: 1 cucumber, sliced + 1/4 cup milk + 3 large mint leaves + 2 TBS of oats + 1 TBS honey + 1 cup ice.

The seeds from papaya are often never eaten, it’s a loss. The benefits from the seeds are as important as from the fruit. Here is why. If you eat any kind of food you are exposed to get parasites. It is not a rare thing and it can be treated easily. In Africa, in a kinder garden, where many kids suffered this they ate papaya seeds for a week as a detox cure and the result was surprisingly positive. They didn’t have any or almost none parasites after just a week.
I have taken the seeds from the papaya and put them in a jar with some honey and water. Every time I make myself a smoothie bowl or a smoothie I take a big spoon from the jar into my smoothie.
They can be roasted and crushed, roasted and used like pepper or just eaten fresh.
The taste of them are peppery so it goes very well with food.

* 1 Cup of Raw Hazelnut (can be replaced w/ Almonds).
* 1 Cup Sunflower Seeds.
* 1 Cup Pumpkin Seeds.
* 1 Cup Shred Coconut (high in fiber and protein).
* 1 Cup Chia Seed.
* 1 Cup Gluten Free Raw Oats.
* 1 Cup Goji Berries.
* Tbsp Extra Virgin Coconut Oil.
* Tbsp Pure Honey .
•Mix them all well together on a baking tray, add them in your Pre-Heated Oven at 210 degrees Celsius for 10 Minutes and until they are nice and golden. While your granola is baking, give them a good steer to make sure they cook evenly.

•Once they are nice and golden to your taste remove them from the oven, let them cool down for about 10 minutes and finalize adding the Goji Berries, Coconut Oil & Pure Honey. This Granola can be stored up to 30 days in a cool dry place or in your fridge.

RECIPE:

Smoothie//
-Equal parts of frozen banana, strawberry, blueberry, pineapple, and mango
-splash of juiced apples (HOME JUICED- not store bought!)
-about 1/2 cup - 1 cup of cold water

Chia Pudding//
-two tablespoons of chia seeds
-eyeball about 2-3 seconds of pouring almond milk -splash of vanilla extract

Toppings//
-equal parts of banana to blueberries (fresh, not frozen)
-coconut flakes (sweetened)
INSTRUCTIONS// 1. About thirty minutes before making your smoothie, combine all ingredients for chia seed pudding. Mix ingredients and then refrigerate the pudding for 30 min - 1hr
2. While chia pudding is cooling down, combine all ingredients for smoothie in a blender. Blend until smooth!
3. Put smoothie in small bowl, top with fresh fruit of your choice, and coconut flakes.
4.Take out your chia seed pudding and drizzle on top of your "Acaì bowl"
5. Take a picture for instagram, post the picture, and then indulge 😋

ERGOT is our Whole Cacao & Local Honey Quadruple IPA. Brewed with fluffy malted oats, rye, and wheat, a special DOSE of sorghum, and local wildflower honey. We refermented/conditioned atop the very fruity/apricoty juice of the cacao pod fruit, and then conditioned even further on cacao nibs. Hopped and dry hopped intensely with fresh hand selected Nelson Sauvin, Mosaic, and wet German Cascade. This is a special one. This is the strongest (and dare I say) one of the most balanced beers that we have brewed in our six year history. A real noodle twister. Eat the old rye and close your eyes. 2 cups coconut milk
36 g vanilla protein powder
1 teaspoon Glutamine powder
20 g collagen (Vital proteins)
1 teaspoon vanilla extract
2 fresh strawberries
1/2 cup blueberries
1 kiwi
1/2 Cup of dragon fruit
1 cup granola
1/2 cup coconut Shredded
2 tablespoons of honey

Add frozen strawberries, protein powder, collagen powder, glutamine powder, coconut milk, vanilla extract into a @vitamix blender and blend on high setting for 30 seconds. Poor smoothie mixture into a bowl, then top with your favorite fresh fruit. Add a scoop of granola with a sprinkle of coconut shavings and a drizzle of honey! .

Gatherer 2018 is our annual collaborative Foraged Honey Imperial Stout we brew with our dear sweet overlord, Drew Fox, of @18thstreetbrewery. Every year, we brew a base recipe inspired by 18th Street's imperial stout, ‘Hunter,’ head into the woods and pluck some spices from Jean’s farm in Chester County, PA. This year we focused on Appalachian allspice, mugwort, wineberry leaves, and over 100lbs of local wildflower honey. Dense and devastating, yet peaceful and floral.
