唐突ですが、僕はあまり日本酒を家飲みしません。
いや、勘違いしないでください。日本酒は大好きなんです。ただカロリーが...アレ?なんか最初と同じ流れ?😂
ってなわけで珍しく昨晩は日本酒を珍しく手元にある唐津で呑んでみたわけです。で、結果、悔しいのですが...ハッキリ言って最高。😭
やっぱり皆さんがあれだけチヤホヤするだけありますわ。小皿を無理矢理平盃に使ったとはいえ、飲み心地はバツグン。本来酒は平たい杯で飲むモノですし、あらためて平盃の良さを感じました。加えて唐津独特の味がたまりません。

やっぱり唐津良いですね。しかも一回使っただけで明らかに今日の表情が昨日より良くなってます。コレはやみつきになるわけです。

Even if I love certain type of ceramics, sometimes the market value them far too greater than how far I can go. Karatsu cups are typical examples of that for me. I truly love the subtle beauty of Karatsu cups but their popularity is through the roof right now and since so many other kinds of beautiful ceramics are going ridiculously cheap nowadays, I rarely can put my priority on Karatsu cups.
I recently acquired these small plates. Both dating back from the right beginning of 17th century, I can clearly see the evidence of these to be excavated at the kiln sites.
Unlike the current Japanese custom, we used to drink rice wine using shallow small plate like dishes and although these were probably never made to be used for Sake, they kind of fulfill the job description.
I actually used them for sake last night and I can tell you one thing. It really annoys me to say this but they are very good indeed!! As long as you find the right piece, Karatsu is much softer than Korean ceramics but much more subtle compare to Mino. I must say Karatsu deserves their excellent reputation.

I learned some traditional tricks from mom in this busy month. Nimono(Japanese stew) is the most basic cooking method that we can adapt to nearly every ingredients. And today I wanna present how to easily cook this dish. It will warm your heart (and stomach :))and the one besides you 💪🏼❤️
(For 4)
Ingredients: ☆The fish!!!! Kinmedai 4 medium pieces (1 for 1 person)
☆1 stick of gobou (great burdock) chopped up into 3 cm. piece
☆1 box of grilled tofu cut up into 2.5cm cubic
★500 ml of sake,170ml of mirin, 170ml of shoyu, 80g sugar
1. Put★ all in a pot and heat to get rid of the alcohol, then put in the fish and gobou. On high heat wait until the liquid is boiling.
2. After 2 mins lower the heat to low and add tofu, cover with lid and with 10 mins.
3. Turn off the gas. Do not open a lid. Wait for all the seasons to be absorbed for at least 30 mins.
4. Just before serving, heat up until boiling wait for the liquid to reduce a little and then you are ready. Pour the sauce in first then arrange the rest.
金目鯛の煮物
簡単で牛蒡の香りが金目鯛の美味しさを
強調〜〜
(4人)
☆金目鯛 4切れ(分厚いなら切れを入れる)
☆牛蒡一本(3cmに切る)
☆焼き豆腐1丁(適当のサイズに切る)
★酒500ml、みりん170ml、醤油170ml、砂糖80g
1.★を鍋に入れ、強火でアルコール分を飛ばす。そのあと金目鯛、牛蒡入れる。強火で沸かして2分。
2.弱火にし豆腐を入れ蓋をし10分。
3.火を止めて30分から寝かせる。こうやったほうが味なよく染み込む。
4.出す直前もう一回強火で水分を減らす。
出すときはまず汁を入れ、具を綺麗に並べる。
