❤ Dinner is my jam: Okay we are still on the cauliflower train! It just keeps getting better. Sometimes it can be hard to find a fresh head of cauliflower but this week they were mold free (which I almost never find) and really big (organic and all!). I bought three! Soooo...experimenting with some buffalo cauliflower wings for Superbowl Sunday with a recipe from @fitfoodiefinds, a beautiful corn chowder from @yumuniverse that has cauliflower florets, and some cauliflower tacos from @pinchofyum. YUM right! And that's just the cauliflower dishes.

To the menu I'm also adding another recipe from @pinchofyum, the roasted red pepper cashew sauce + penne with roasted cauliflower (yup, more cauliflower - I'm still not tired of it) Pasta will be from @jovialfoods - the only gluten free pasta I use! .

Majestea is a quaint little cafe in @seefmall delivering homey comfort food in a vintage tea shop setting. While they are very well known for their breakfast and dessert (lotus pancakes anyone?), they have been steadily building up their savory dish repertoire and I was invited to sample some of the items off their new lunch menu. It was a feast and one I left very full and satisfied! Some of my favorite offerings were the prawn toast, the falafel salad, the spaghetti bolognese and creamy penne Alfredo, and the guiltless chicken and beef tenderloin. The portions are generous, the prices are reasonable, and you can’t leave a tea shop without trying their new ice tea creations which are thirst quenching, refreshing and beautifully presented. You’d be doing yourself a disservice if you forgot about dessert so give their new ones a try- the chocolate French toast in a jar and my favorite the fried ice cream which I posted about a couple days ago. When there is less control you are at the power of local shops, staff canteens and supermarkets. They can provide advantageous food, but my guess is; first you have to get lucky to find it. And that it’s expensive. If you look at the pasta pot on the left you’d assume the chicken is favourable (protein) and that the small size of the container means it’s not going to be too heavy on the calories... except it probably is. 34g of fat makes it a little unbalanced.

The other thing about buying lunch everyday is that you are likely to purchase additional items simply because - they catch your eye. A bottle of juice and a chocolate bar later and you just consumed over 1000 calories whilst probably being unaware of this feat. This can affect progress. Massively.

You can take your controlled environment to work though. All you need to do is prepare it at home. This chicken salad can be eaten hot or cold and is far more nutrient dense and tasty than a lot of over priced, low quality, high calorie packaged items. You just have to be aware of what you’re consuming. Using nutrition trackers is a great step in the learning process (you can sign up to mine for free by clicking there link in my bio)

1️⃣ Roast a chicken breast & 200g sweet potato for 40mins.

2️⃣ Add spinach, 1 chopped spring onion, 20g goats cheese, 1/2 pepper, seasoning to a tub.
3️⃣ Then add the chicken and sweet potato with 30g of light green pesto. Store in the fridge overnight and you’re good to go.

Måske vi skal forbi Vesterbro torv og købe fredcos med hjem i toget?🙈

I didn't make a lunchbox treat this week - there is a FULL container of left over bits and pieces in the freezer that hubby and I will be making our way through this week.
The recipe for the mocha bliss balls is further back on my page and I don't think I ever posted ... or wrote down the berry one! I have the same salad and my snacks include popcorn, dried apple and pear slices and a piece of my raw caramel slice also from the freezer.

Firstly, Pizza tends to be a Saturday thing & it’s usually VERY thin & topped with cheese & vegetables only.. & secondly, the Italian way of eating consists of many small courses .. which I LOVE! 🍕

Apparently lunch is the biggest meal of the day but we used to eat out lighter at lunch (pictured) then have multiple courses on an evening, for example.. 👇🏻👇🏻

Appetisers.. bruschetta or bread with olive oil & balasamic vinegar and olives/melon and ham or more bread with creamy mushrooms, egg & truffle 🍞

First Course.. Ribollita (a delicious bread based soup), pasta with pesto mushrooms or pasta ragu (with beef), lasagne or a cheesy risotto 🍝

Second course.. a cheesy and vegetable dish or more meat & fish eg aubergine parmigiana/mozzarella with vegetables or steak with salad & potatoes 🥩 🥗 🥔

To make the burger 👉🏼 I diced white onion into a bowl, added @verylazyfooduk garlic (game changing!) a beaten egg, 5% mince and @jdseasonings burger blend. I mixed it all together and then wrapped around a light babybel cheese (2) then popped into the oven for about 20 mins until cooked and the cheese was oozing 🤤

Making a scrumptious meal can not only nourish the body but also the soul. I don’t think that healthy eating is about eating salad 🥗 for lunch every day. It’s so much more than the food on your plate. It’s the love that goes into cooking it. It’s how eating makes you feel and taking time to enjoy your meal.
So I’m having a Pea pesto pasta lunch. Wanna join me? It’s only takes 10 minutes max👍Here is the recipe:
Brown rice pasta, broccoli, pesto, toasted almonds and peas
serves 2
150g of brown rice pasta
Half a head of broccoli, cut into florets
1 spirulized courgette
2 tbsp of pesto
2 tbsp of toasted flaked almonds
50g of frozen peas

Rinse the pasta and cook as per instructions.
Steam the broccoli then pop into a pan along with the pesto, half the almonds, peas,
mushrooms and a large pinch of salt and pepper. Stir well for a few minutes until everything
is coated and the mushrooms are cooked through. Add the pasta and courgette to the pan and stir until the
pasta is fully coated.
Serve with the rest of the flaked almonds and a sprinkle of chilli flakes.

The dressing on this salad contains mostly olive oil (extra virgin from first pressing). However as I look at this picture I realize I forgot to add my usual pumpkin seeds or avocado!! No wonder I was still hungry afterwards😂

These burgers are on page 167 of my recipe book🍔🥗 Super simple, I just added an egg, sea salt, turmeric, cumin, ground ginger, cinnamon, black pepper and red pepper flakes to the ground turkey, as well as a touch of oat flour... and threw them on the BBQ!

So ya, no, you don’t see a carb source here - I realized some time ago that I function WAY BETTER (health, weight, energy, satiation) by eating LCHF most of the time. That said I strategically eat carbs before and after certain workouts to ensure I’m also maximizing performance and recovery... It’s a balance. Now, my (very metabolically efficient) hubby does require carbs with each meal - so I’m always cooking up potatoes or white rice or millet or beans or pasta for him. Must make it work for everyone, no matter your body type!

For 6 people you need: 1 large basil plant, leaves only 25g pine nuts 2 cloves garlic, chopped 🥄1 tsp granular sea or Himalayan salt 🧀50g freshly grated Parmesan(or vegan type) 🥃1-2 dl extra ... Easy Pesto Genovese😍
Fast, yummy sauce or spread to use on pasta, bread, tofu or fish.
💚For 6 people you need:
🍃1 large basil plant, leaves only
🌰25g pine nuts
🍥2 cloves garlic, chopped
🥄1 tsp granular sea or Himalayan salt
🧀50g freshly grated Parmesan(or vegan type)
🥃1-2 dl extra virgin olive oil

Toast your pine kernels in a dry frying pan for 2-3 minutes, until golden. I like to toast some extra for serving.
If you're using a mortar, pound the garlic with the salt until you have a smooth paste.

Add the pine nuts and keep pounding.

Then start adding the basil leaves, 2-3 at a time and keep mashing until all is reduced to a silky paste.

Add the cheese, stir and then add the oil and stir with a wooden spoon until you have a smooth, silky pesto. The amount of oil you adds depends on your preference of texture.

Alternatively place all ingredients in a container and blend with your stick blender until you reach the preferred consistency.

You can pour any leftover pesto into a clean jar, top with a layer of olive oil, cover tightly and keep it in your fridge for up to a week.

Mix into hot pasta and serve straight away. I eat it with salad, ekstra pines, parmesan and bread. Enjoy!

Spaghetti bolognese (pictured with a burrata salad)🍝🧀. I always make pasta sauce from scratch because its so easy and tastes 10x better than what you get in a jar.

All you need are; three tins of crushed tomatoes, diced onion (1), garlic(3 cloves) and carrot(1) (for sweetness and it tones down the tartness of the tomatoes as well), oregano, a bay leaf(1), beef mince(500g) and s&p.

Cook down the onion, garlic and carrots in some olive oil first, add the beef and then everything else in the pot including a tin of water and simmer for about 30mins with lid partially off. Add s&p to taste. Breakfast: Veggie egg white scramble topped with low fat American cheese and some fresh tomato with a side of Greek yogurt mixed with powdered peanut butter. Also had coffee with cream and sugar
Lunch: Salad mix topped with @bolthousefarms ranch with @realgoodfoods low carb beef enchiladas (Code “girl” for 10% off)
Snack: @westernbagel Perfect 10 bagel with a @thelaughingcowusa cheese wedge and more powdered peanut butter mixed with @skinnymixes (Code “whims” for 10% off @westernbagel)
Dinner: Half a box of @eatbanza chickpea mac and cheese pasta mixed with 250g of steamed broccoli sprinkled with low fat cheddar over top
Dessert: Low fat peanut butter apple pie protein bar from @healthyeat_onthego
Everything adds up to 1,615 calories 172c/48f/141p and I feel full and satisfied and motivated to keep things up 🙌🏻🙌🏻🙌🏻

Next week, I may decide to eat low carb only to binge on pasta at the end of the week. And guess what?! THAT IS OK! We’re all human. 9 times out of 10 it sounds like they are eating good foods and making health conscious decisions..but it is more often than not, not what we eat but how much we eat that is the problem.

Example ‘ I have oats for breakfast with fresh berries.. that is health, right?’

Well, depending on portion size those breakfast oats can easily range from 200-600 calories., maybe more if you are adding some ‘healthy’ nuts or nut butter. The same is true for your salmon and pasta salad at lunch.. it sounds great and these are excellent foods to include in your diet but without portion control you could quite easily be consuming more calories than you need meaning you won’t be losing body fat.

Now, say what you like about ready meals but one thing they are great for is portion control. If portion control is something you struggle with utilising ready meals may be a good tool to use (at least initially).

There are some great options out there now.

One of my clients has lost 6.2kg in the last 6 weeks purely from swapping his evening meal to a high protein ready meal. He has made no other conscious effort to change his diet.

Eating 6 small meals a day doesn’t boost your metabolism.
It’s also not sustainable for the average person.
If you have children, a full time job or attend school finding the time to eat 6 times a day is going to be hard.
That’s why I recommend the traditional 3 square meals a day with a snack.
Keep it mind eating 3 meals means your meals will be larger. So you will stay full longer between meals.
Here’s an example of how a healthy day of eating could go on 3 meals.
Breakfast could be a smoothie or protein shake of your choice.
Lunch could be a nice sized turkey burger fully loaded with baked fries and a small side salad. Delicious and Filling 😋
And Dinner could be a nicely portioned shrimp pasta or some tacos.
All you have to do is fit these items in to your caloric intake and you will 100% lose weight.
And for a snack you can have some mixed fruit or nuts.
Don’t stress your self out trying eat 6 meals in a day make your eating fit your schedule.
