intro // where i live, it's now summer. most people are going to be going on trips or vacations during this season, here's how you can remain healthy.

▲ first of all, id like to point out that this! is! a! vacation!!!! you're meant to indulge yourself, eat yummy food, and relax. please dont be hard on yourself.
▲ pack some food. before you leave on your trip, pack some healthy snacks. when you're out and about, you can eat these instead of unhealthy food. it is also a money saver.
▲ walk. if its nice out, walk somewhere. go hiking. do some sight seeing. walking is a great workout for vacations.
▲ if you're in a warm climate, you can also get a great workout from swimming. it will cool you off and burn some fat.
▲ book a hotel/place to stay that has a gym. if you're up for it, do a few quick workouts in the gym. or do workouts in your room without equipment.
▲ bring a water bottle. hydrate yourself and try to refill it before you go anywhere. —

This weeks lunch was chicken breast with a creamy mushroom sauce and whipped mashed potatoes. It almost tasted like thanksgiving dinner but with out feeling tired and guilty for eating unhealthy food. • Chicken - 2-3 Tbsp of your choice of cooking fat. Sear chicken skin side side down ... This weeks lunch was chicken breast with a creamy mushroom sauce and whipped mashed potatoes. It almost tasted like thanksgiving dinner but with out feeling tired and guilty for eating unhealthy food.

Chicken
- 2-3 Tbsp of your choice of cooking fat. Sear chicken skin side side down until crisp and brown
- flip and cook other side of chicken for 2-3 minutes.
- Place pan in oven and cook until fully cook.

Mushroom Sauce
- Remove chicken from pan and keep all the yummy juices and bits
- Place diced shallots (2) in pan with all the goodness and sauté until translucent - Add 2 cups of mushrooms and 4 Tbsp of fresh thyme, sauté until mushrooms are tender
- Add 2 cups of chicken stock, 1 cup of coconut milk, add salt and pepper to taste and 2 Tbsp Arrowroot. Reduce heat and simmer until the sauce thickens.
- Remove from heat and add juice from half a lemon.
- Serve over chicken and enjoy
