Make Your Own Couscous
Couscous is an amazing side dish because it is easy to make and it tastes like you cooked it all day. I always buy the plain one and add my flavors into it. Here are my tips for a delicious Couscous.
Vegetables: I always add garlic and onions but you can throw in any veggie you like such as carrots, celery, bell peppers, peas, and asparagus. The vegetables that need to be cooked can be sauteed before the liquid is boiled but try adding fresh ones into the couscous after it is cooked too.
Herbs/Spices/Acid: Fresh herbs make a world of difference and dried ones too. You can cook some herbs that hold up to heat but add the fragile ones afterwards. Spices like cumin, sage, sumac also add flavor and acids like lemon and orange zest/juice add a nice zip. Mixing and matching is part of the fun!
Stock/Liquid: I usually use chicken stock but you can use water or vegetable stock as well. This is another place to add flavor so even a bouillon cube is better than nothing.
Fruits (Fresh or Dried): Fruit is a great addition to Couscous. Dried cranberries, raisins, dried dates are great but you could add dried persimmons, apricots, prunes, or blueberries. Fresh fruits are good to add-in last like oranges, strawberries or apples but they don't hold up well to storage so eat it right away.
Nuts: The nuts add texture as well as flavor and I love adding them to couscous at the end. Pistachios, walnuts, almonds, hazelnuts, peanuts and pine nuts work well. I really like pistachios in my couscous because they have a distinct flavor that pairs well with fruit.
