Everything was so new and exciting. I had never heard of spiralizing or cashew cheese. .

To make waffles, spiralize one medium sweet potato (I used a Japanese yam), and sauté over medium heat in olive oil for about 6-8 minutes until soft. Season if desired (I like to use salt, pepper, garlic powder, onion powder, bay seasoning, etc.) Mix in a bowl with one egg, and spoon into your waffle iron. Cook for about 4-5 minutes on medium heat until waffles are golden and firm! You should be able to lift them up with a fork and they should stay together.

I am a journalist by trade, I journal daily, I write poetry (that nobody reads), and my greatest goal in life is to publish a young adult novel. I find joy through the written word, yet ironically, I struggle with how much to share on here. I love when people are honest and vulnerable on Instagram, but I am intimidated at the thought of thousands of people judging what I have to say. I started off here posting food, where I remained behind the camera, and it was easy. Even in my writing, I could hide behind a screen. Then Insta stories came along, and suddenly, I had to become comfortable with sharing my life. That has been an adjustment for me.

However, I feel like this “sharing” is important. Health and wellness falls under a huge umbrella, and while food and diet matter A LOT, being healthy is more than just what’s on your plate. I am by no means a perfect exemplar of health, but I try really hard. I spend every single day researching, writing, reading, and implementing ideas about how to live your healthiest life, and it would be a shame if I held back the other parts of me that go beyond what I’m eating just because I feel weird about people paying attention to me.

Instagram has changed a lot since I started using it, and I’m still figuring it out. Sometimes I just don’t have the energy or desire to film what I’m doing daily. But that’s part of my “Instagram Truth.” I will never post and pretend to be happy when I’m actually not. But I also might not share every low moment I have because I want privacy and the option to keep it to myself. I don’t see many bloggers talk about this, and I don’t really know how they feel! Maybe they are more comfortable with it than I am or it comes more naturally, or maybe it’s taboo to admit this to your followers? Im not sure, but I’m still figuring out the balance. ❤️

I'm not usually a protein powder person, since I much prefer savory foods and don't really make smoothies often, but this bone broth protein powder is definitely something I will be using often (for real, I see myself using this in lots of savory dishes like soup or even baked goods). It's super rich and savory, and I was surprised at how much I loved the flavor. I could definitely see myself mixing this in with just water and drinking it by itself as a broth. Kale is massaged in olive oil and salt and tossed in apple cider vinegar, pepper, and hemp seeds. Also here’s a dose of Instagram reality: I struggled to get a good picture of this toast. It was super messy, and I’m honestly not in love with this picture. But this tasted so delicious that I figured it would be so silly to deny you guys this recipe just because the picture wasn’t super amazing. A lot of you ask how I make my matcha lattes, so I’ve updated my Matcha Latte Guide on my blog and linked it in my bio! But here is my usually recipe for an iced:

• 1-2 tsps matcha (I like @ippodoteausa and @aiyamatcha)
• 1 1/2 cups alternative milk of choice (I like oat or almond)
• 1 scoop collagen powder (I usually use @vitalproteins, link in bio for that too)
• 1/2 tsp maple syrup or 1/2 Medjool date

Blend for 1 minute until frothy and serve over ice. To make it a rose 🌹 matcha, add 1-2 tablespoons culinary rose water!

I used Extra Virgin Olive Oils From Spain (@oliveoilsspain) to roast the veggies, massage the kale, and create my own chimichurri (recipe below). You probably have noticed that I use extra virgin olive oil in most of my dishes, and that's because it not only strengthens the flavor of food, but is a good source of monounsaturated fats. I've been experimenting with Extra Virgin Olive Oils from Spain, as Spain has the largest variety of olives — over 200 different types that offer a broad variety of aromas and flavors! To make chimichurri:

Ingredients
1/4 cup fresh parsley
3 cloves garlic
2 tablespoons dried oregano
2 teaspoons crushed red pepper
3 tablespoons red wine vinegar
1/2 teaspoon salt
1/2 cup extra virgin olive oil

Blend everything together minus the olive oil. Once everything is smooth, mix in olive oil, and drizzle over food as desired.
