Fish maw soup (鱼肚)
I miss Thailand and fish maw soup 😍
Use dried shiitake and coriander root to make soup. Add chicken stock and season with sake, soy sauce, mushroom sauce, mirin, sugar and black pepper!
Add corn starch (slurry) at the end to thicken the soup. For fish maw, you have to boil it and get rid of the old oil in it before chop up and add back to the soup. For side ingredient you can add chicken, boil eggs(I don't have quail eggs here but if you have, quail eggs is the original recipe), blood, bamboo shoot.

乾燥したものを茹でて油とって、スープに最後に入れる。
スープの方は乾燥椎茸の汁とチキンスープ、パクチーの根っこに醤油、みりん、お砂糖、お酒、椎茸ソース(なければオイスターソース)、黒胡椒。最後には片栗粉でトロミ付ける。具は鶏肉、血(ここにはないが)、椎茸、竹の子、ゆで卵〜

Chicken and petit onions in White wine sauce❤️
recipe for 3
1. Flour, season 400g chicken (salt&pepper) then sear chicken in hot oil until colored.
2. Take chicken out. Wipe out excess oil and put in some butter. Sauté the onion(8-12) (and other veggie if your choice) after put back in chicken. Pour in white wine and chicken stocks.(1 cup each) Set on high heat.
3. After wine's evaporate put on lid, turn gas to low and let simmer for at least 10 mins. Season with salt pepper before serve!!
2-3 人前のレシピ
1。400gの鶏を小麦粉で塗して、塩胡椒振って強火で表面の全体を色つける。
2。鶏を取って、油拭いて、バター入れてプッチ玉ねぎ8-12個入れてバターで炒める。(マシュルームなどあれば一緒に入れても美味しい)色がついたら鶏を戻す。
3。ワイン1カップとチキンストック1コップ入れて強火でアルコール分飛ばす。そして弱火して、蓋して10分ほど煮る。
4。最後に塩胡椒で味付けて完了。

6 scallops for 2 people:
1. Make sauce by stir in cream in chicken stock (1:1).

3. Heat the pan add butter then grill scallop 2 mins on one side and 1 min on another side.(don't for get salt&pepper again!) 4.last minute add some cherry tomato to the pan. Plate! Yum!
6個のホタテ使いました。4人で食べたけど実際は2人でも余裕ですね。
1。ソースを作る。1:1でチキンストックと生クリームを温め、水分の量が半分に減ったら小麦粉を入れて混ぜ、とろみ付ける。
2。レモン汁少し加えて最後にソースを塩胡椒で味付け。
3。ホタテを塩胡椒で味付けたら、強火でホタテをバターで焼く。片方2分ほど、反対側は1分ほど。最後の1分はトマトをフライパンに入れて一緒に焼く。終わったら盛り付けてお召し上がり〜

“What I should do with the leftover minced pork??” if you happen to have this problem, please come this way. This pork dumpling will satisfy everyone as the best appetizer. So damn good to have hot clear soup and smooth soft wonton!
<4 servings> (will get 5 wontons per person)
▲ Wonton skin 20 pieces (or more if you use more pork)
▲ Chicken stock 3 cups (Or soup powder)
★ Minced Pork 150g
★ Green peas (frozen or fresh whichever you have)
☆ 3 friends(coriander root-black pepper-garlic blended) 2 tsp. *if you don’t have coriander root…. Just leave it out. It’s gonna be fine.
☆ 1.5 tsp sugar, 1 tbsp oyster sauce, 1tbsp soy sauce, pinch of salt, 1 tsp sesame oil, 1.5 tbsp sake, 1 tbsp corn starch
☆ finely chopped leek (1/3)
☆ 1 tsp grated ginger
① Mix minced pork with all ☆ and cool in refrigerator for at least 20 mins.
② Boil 1 pot of water for cooking wonton and heat chicken stock in another 1 pot. Season the stock with salt & pepper.
③ Wrap the mixture (①) in wonton skin. Do not add too much or the wonton will break.
④ Boil wonton for 2 mins. If your pot is small you can do it 10 pieces each time.
⑤ Add green peas to soup until cooked before transfer cooked wonton in to the clear soup. Garnish with coriander leaf as you like. ≪豚のワンタンスープ≫
いつも豚のひき肉が冷蔵庫に残っている。餃子は飽きちゃったし今回ワンタンに使おうと思いました。透明なチキンストックと一緒に食べてお腹が温まります~!
【4人前】
▲ ワンタン皮1パック (20枚ぐらい)
▲ チキンストック(または鶏がらスープ) 3コップ
★ 豚のひき肉150g ★ グリーンピース(適量)
☆ パクチーの根っこ-黒こしょう-ニンニクをペースト状 2 tsp. *パクチー根っこがなければ入れなくていい!(ただし、あった方がいい香りがします。)
☆ 1.5 tsp 砂糖, 1 tbsp オイスターソース, 1tbsp 醤油, 塩少々, 1 tspごま油, 1.5 tbsp 酒、1tbsp 片栗粉
☆ ネギのみじん切り(1/3)
☆  摩り下ろした生姜1 tsp
⑥☆全てを挽き肉に入れてよく混ぜる。20分ほど冷蔵庫で冷やす。
⑦ ワンタンを茹でるお湯を準備し、別の鍋でチキンストックを温めておいて塩胡椒で味調整する。甘いの好きなら砂糖入れても良い。
⑧ 挽き肉を三角形にワンタン皮で包め、水でくっ付ける。
⑨ ワンタンを2分ほど茹でる。鍋のサイズによって何回か適切に分けて茹でる。
⑩ グリーンピースをスープに入れて茹でる。出来たワンタンを入れ、パクチーをかける。熱いうちにお召し上がり٩(๑`^´๑)۶

I learned some traditional tricks from mom in this busy month. Nimono(Japanese stew) is the most basic cooking method that we can adapt to nearly every ingredients. And today I wanna present how to easily cook this dish. It will warm your heart (and stomach :))and the one besides you 💪🏼❤️
(For 4)
Ingredients: ☆The fish!!!! Kinmedai 4 medium pieces (1 for 1 person)
☆1 stick of gobou (great burdock) chopped up into 3 cm. piece
☆1 box of grilled tofu cut up into 2.5cm cubic
★500 ml of sake,170ml of mirin, 170ml of shoyu, 80g sugar
1. Put★ all in a pot and heat to get rid of the alcohol, then put in the fish and gobou. On high heat wait until the liquid is boiling.
2. After 2 mins lower the heat to low and add tofu, cover with lid and with 10 mins.
3. Turn off the gas. Do not open a lid. Wait for all the seasons to be absorbed for at least 30 mins.
4. Just before serving, heat up until boiling wait for the liquid to reduce a little and then you are ready. Pour the sauce in first then arrange the rest.
金目鯛の煮物
簡単で牛蒡の香りが金目鯛の美味しさを
強調〜〜
(4人)
☆金目鯛 4切れ(分厚いなら切れを入れる)
☆牛蒡一本(3cmに切る)
☆焼き豆腐1丁(適当のサイズに切る)
★酒500ml、みりん170ml、醤油170ml、砂糖80g
1.★を鍋に入れ、強火でアルコール分を飛ばす。そのあと金目鯛、牛蒡入れる。強火で沸かして2分。
2.弱火にし豆腐を入れ蓋をし10分。
3.火を止めて30分から寝かせる。こうやったほうが味なよく染み込む。
4.出す直前もう一回強火で水分を減らす。
出すときはまず汁を入れ、具を綺麗に並べる。

(Recipe)
1. If your meat is very thick just make some slid to the meat. And know what, I'm too not worrying about loosing the meat juice. Wagyu are as juicy as watermelon. XD season with salt pepper just before grilling.
2. Grill it in hot pan with beef fat.(if it doesn't come with the meat then use olive oil) have the lid on for a while.
3. Open the lid and flip the meat. Throw in slices of garlic. When both side have nice brown color you are done. *we only eat RARE wagyu here* lol
Do not forget to pour all good thing in the pan on our steak before serving.
松阪牛のステーキ〜
お正月に買ってまだこんなに残ってるという。
簡単に塩胡椒か醤油ワサビでも最高美味しい。
1。肉が厚いなら火が通りやすいために所々切れを入れる。 焼く直前両面に塩胡椒で味付ける。
2。強火で牛油を使って肉を焼く。(なければオリーブオイルで焼く)蓋を閉じて3-4分待つ。
3。蓋を外して、薄切りしたニンニクを入れて肉をひっくり返す。両面がきれいに色付くまで焼く。(後3分) *これはレアだよ*
最後に残った油でステーキにかける。

I just came back from Thailand yesterday 😍 sorry for not uploading anything for so long. I hope everyone had a great time on Xmas and new year holidays.
★Recipe For 4-6
1. 250 g salmon cut into 4-6 pieces >> cook with first skin down on high heat. When opaque orange could be seen at the bottom (0.5 mm?) flip the salmon and after 3-4 mins rest them in separate plate.
2. To make sauce use 1 chopped small onion and 2-3 leaves of Chinese cabbage. First lightly sweat onion and add 1/3 cup white wine. After reduced, add cabbage and water stir fry for 2 mins then add 1/2 cup of fresh cream and some flour to thicken the sauce. Season with salt and pepper.
3. Return the salmon to the pan until fully cooked. Sprinkle dill all over the dish.

★(レシピ 4-6人前)
1。250gのサーモンを4-6切れに切って焼く。(まず皮側をフライパンに)強火で4分で焼いたらひっくり返してあと3-4分で焼く。終わったら別のお皿にサーモンを入れておく。
2。ソースを作る。ミジン切り小さい1個の玉ねぎを3-4分炒めて1/3カップの白ワインを入れる。アルコールを飛ばしたから千切りした2-3枚白菜を入れて炒める。1/2カップずつのお水と生クリームを入れて混ぜる。とろみ付けるために小麦粉を1tbspを入れる。塩胡椒で味付ける。
3。最後にサーモンをフライパンに戻しあと2-3分経ったら完了。ディルを全体的にかける。
ps。お父さんが美味しいと久々に褒めてくれました。😊😊😊

1 pack(10) Brussels Sprouts
1 clove of Garlic
Olive oil 1 tsp
Butter 2 tsp
Mirin 1 tbsp
Salt & pepper
(Step)
1. Halve all the Brussels Sprouts then put oil and butter on hot pan
2. Add garlic to the pan for 30 secs. Then put all Brussels sprouts face down and do not touch it for 2 mins on medium heat. Season with salt pepper.
3. When colored, add mirin and stir. The mirin will help glaze the Brussels sprouts nicely.
After stirring for another 2 mins the dish is ready. Easy isn't it?
芽キャベツのバター炒め
普段見掛けてないものが今日見つかったので簡単の炒め物にします。
(材料)
芽キャベツ 10個(1パック)
にんにく 1粒
塩胡椒
みりん
オリーブオイル1tsp&バター2tbsp
1. 芽キャベツを全部縦で半分に切る。バターとオリーブオイルをフライパンに入れて強火にする。
2。にんにくを入れて30秒立ったら。、芽キャベツの切った側でフライパンに入れる。塩胡椒で味付ける。
3。色がついたらみりんいれて混ぜる。これで綺麗に芽キャベツの全体がグレーズされる。あと2分ぐらい炒めて完了。
本当に簡単でヘルシー。芽キャベツのクリスピー食感とバターの香りがたまらないね。
