Today’s joy has been found in this yummy white bread 🍞(it was enjoyed with plenty of fruits and veggies 😊)
If you find yourself social distancing at home but craving bread it’s super easy to make:
450g (or 3 cups) plain flour
1/2 tsp of fast action or ‘easy bake’ yeast
1 1/2 tsp salt
350ml (1 1/2 cups) water (I use warm)
Place all the dry ingredients in a 2L ovenproof bowl and give them a stir.
Add the water and mix vigorously with a tablespoon for a couple of minutes.
Cover the bowl with cling film and leave to rise in a warm place (ideally 18 to 21 degrees) for around 12 hours. Note - I leave this on the side in the kitchen but I think you need to be careful in the summer when it gets hot as it doesn’t like to be too hot.
When you are ready to bake the bread, preheat your oven to gas mark 8 (230 degrees Celsius / 450 degrees Fahrenheit). My oven won’t go this hot so it will work just fine around 200.
You might have to adjust the temperature depending on your oven.
Place a large sheet of baking paper on your work surface; with flour on top (you will need two or three heaped tablespoons).
Using the tablespoon, drop the sticky dough on top of the flour and use the tablespoon to shape the dough in a sort of ball and make sure it gets covered all around. It will still look gooey and that is fine.
Wash the bowl and dry it or use another one. Place it in the oven to warm for 20-30 minutes.
After that time, make sure the dough is still covered in flour all around. Use oven gloves to take the ovenproof bowl out and sprinkle a little bit of flour in the bottom. Plop the dough in the bowl, cover with foil and put in the oven for around 45 minutes. See below.
You may find that when you remove the foil the bread is a little pale. I remove the foil after about 30 minutes and put the bread back into the oven for a little while longer to brown. (Recipe from lecoindemel.com) 🌱😋💪🏻#joyfulfood #homemadefood #homebaking #joyhunting

How are you doing? Some of us have been feeling a bit scared and out of control. These are very strange times we’re living in right now. The girls have been home from school all week and our routine has completely gone out of the window. So today I’ve decided it’s time to take control of what I can. I’ve been out for a run in the beautiful sun. I’ve been looking at the signs of spring all around and I’ve started to make a plan for the coming weeks. See what you can do to try to feel more in control. Make a plan to get outside (if permitted), observe nature and breathe fresh air. Try to move your body every day. That could be a walk, bike ride, run or a home workout. You will feel so much better if you do. Try to fuel your body and not just grab what is quick and easy. Think about the balance of nutrients you need to keep you feeling strong and healthy. Practice yoga and/or meditation. Whatever you do, make a plan because in the moment it’s easy to feel like we don’t have time and that we’re out of control. Sleep 😴 It’s so important. We really can’t underestimate the effect of poor sleep patterns on our lives. For some reason, I’ve been awake since 2.30 this morning and to say today is not going to plan is an understatement. I’ve wanted to eat a lot more than normal, I’ve not done the workout I planned (I’ve done something short but not what I had in mind), I’ve not caught up with my good friend, I’ve not been able to focus properly on my tasks.... So the moral of the story is, get your sleep. Make sure you have a night time routine, try to ditch the electronic devices an hour before bed, have your bedroom at a comfortable temperature and make sleep a priority #sleepyhead #getsomesleep #trytofocus
