Shared on stories my larder like shelf. I’ve put aside jars and bought fairly priced ones as and when I’ve seen them the last few months. Means it’s not silly money. Ingredients are the basis of each cake I make, they deserve a nice home.
P.s I buy most things in bulk. Keep the big packets in the garage and then decant into a jar as and when’s necessary
@nectarandstone basic meringue recipe. Makes 60 eeni mini meringues or 8 dessert-sized portions. Halved this recipe for my bows and used a pme leaf nozzle to pipe them.
2 egg whites
110g caster sugar
1tsp white vinegar
Flavoured extract (optional)
Drop of gel paste food colouring
Preheat the oven to 100 degrees (fan).
Line two trays with baking paper.
Using a stand mixer on high speed, whisk egg whites til soft peaks form.
Reduce the speed to medium and using a tablespoon add the sugar a little at a time. Til the mixture’s smooth and glossy.
Add the vinegar, flavouring and food colouring. Whisk as before on high speed for 3-5 minutes. The mixture should double in volume.
Fill piping bags and pipe onto the baking trays.
For mini meringues bake for 20 minutes.
Then turn the oven off and leave the meringues in the oven for another 40 mins.
After this take them out of the oven and leave to cool another 10 mins.
