Nope, this is not a painting. And it doesn’t even have a filter on it. It’s just the country we’re so very lucky to live in🙌🌏 Skippers Canyon. Had a little adventure with the kids there on the weekend in search of some legendary white raspberry plants (to take cuttings from). Didn’t find any on this trip (maybe they are just a legend?), but it was fun anyway☺️

There has been so much debate around this, and it’s such a big topic, and one that is actually quite complex to navigate (it would take me hours to explain!). So for simplicity’s sake, my stance is simple. Regardless of which way you choose to eat - whether you’re vegan, vegetarian, or an omnivore (someone who eats a bit of everything) - like me - there is no doubt that eating more veg would do all of us good! And I think most people know this, and more veggies on our plates are therefore here to stay (which will invariably replace some of the animal foods on our plates). However, I encourage you to eat intuitively. Some people can do well on an all plant-based diet, however it doesn’t suit everyone. Everyone is so genetically varied, that there’s no one diet that fits all, right? Above all, let’s make sure we protect real food. I keep coming back to @michael.pollan ‘s sage words - “Eat food. Mostly plants. Not too much” What do you guys reckon about all of this? Would love you hear your thoughts! 🙃

I’ve made ‘Ciro’s Gnocchi’ from Vegful three times in the last couple of weeks because, believe it or not, fresh home-made gnocchi is incredibly easy and quick to make (the hardest part is squashing the cooked potato through a sieve if you don’t have a potato ricer). If you haven’t made your own gnocchi yet, PROMISE me you’ll give it a go! You’ll be stoked with the result - it’s nothing like the bland doughy stuff you get in a packet. They’re soft, silky and delicate here. Little tip - they freeze really well! Lay them in a single layer on a flat tray and freeze a few hours until hard, then store in a ziplock bag for up to a month. Just drop into salted boiling water straight from the freezer when you want a quick meal👍👌 Btw, that’s Ciro on the right - he makes THE best gnocchi in NZ and many moons ago I waitressed in his restaurant. We had a lot of fun (and arguments!) and he showed me what real gnocchi was all about! I’ve put the recipe (from Vegful) on my Insta stories so you can try! ☺️

I have a bit of an obsession with little old sheds, I love imagining who used to hang out in them and what did they do...were they cosy inside? I’ve called this one ‘Bob’ - apparently it was a milking shed around 150 years ago. He’s a bit (actually, a lot) on a lean from years of being thrashed by the wind, but he’s still standing strong and gets to watch the most awesome sunsets and house a lot of bunnies! Pic from the latest @nadiamagazine where I chat about our move to rural life down south🌱

So lucky to be gifted this beautiful wild caught salmon from one of our neighbours🙏(I’ll repay them with some wild rabbit and apricot pies!) Stuffed it...Lemon. Parsley. Garlic. Butter. Olive oil. Salt. Pepper. Bed of sliced potatoes. Scorching hot oven for 25-30 min. And just like that it was done. And it was simply sensational👌
